- Get 1 tbsp Ghee or clarified butter

- Take 1/2 tsp turmeric powder

- Prepare 1/2 fresh red chilli , seeds removed and chopped finely

- Take 2 tbsp tomato puree
- Prepare 3/4 can of best plum tomatoes,
- Take 250 ml vegetable stock
- Make ready 2 tbsp not heaped, of your favourite Masala Powder. I usually use Kolhapuri Masala but Graram Masala will do
- Prepare 2 tbsp fresh chopped coriander (cilantro)
- Take 50 ml coconut cream

- Add the stock and simmer gently if using meat for about 90 minutes until meat is tender . If using tofu make sure it is heated thoroughly through, add half of the coriander.

Use gluten-free soy sauce if needed. Coconut sugar: A traditional sweetener used in Thailand for curries! If you want to infuse your tofu with more flavor, I recommend adding sauce after it's baked, rather than marinating it. I always use tamari instead of soy sauce because I prefer the flavor of it! Look for tamari next to the soy sauce in the Asian aisle of the grocery store.
