It's not a necessary step but I can no longer cook beans without first. Nigerian jollof rice and beans is very filling. It fills you up so much so that you just keep drinking water the whole day without feeling hungry. It is very easy to cook and less expensive too.
Steps to make Rice and beans jollof:
- Wash meat place in a pot, adda seasoning cubes, slices onion,salt, spices, cook until soft. Keep aside
- Wash beans place in a pot add enough water to cover it, set over medium high heat, boil it until soft. Drain and set aside
- Boil rice until halfway cooked, drain into a sieve rinse in cold water and set aside
- While rice beans are cooked, grind tomato, tattase, scotch bonnet, and onion together. Pour vegetable oil into a pot over medium heat,add slices onion, fry until soft, add tomato paste mix and fry for one minutes
- Add puréed tomato, stir and fry until dry(oil is floating on top). Crush and add seasoning, cubes, and crayfish. add a little warm water and add some meat, fish, beans, rice,and kpomo, stir and taste
- Cover tightly and cook until soft, and little water has remaining. Stir and reduce heat to very low, cook until water has been absorbed, stir and serve😋
Every day is not christmas, this was cooked with only beef stock and crayfish, no meat or fish. Jollof rice is a very common dish prepared in many African countries and each recipe differs depending on the nation. I specifically prepare the Nigerian party jollof rice which I still feel is one of the best recipes out there (not being biased, just stating facts LOL).
